When the holiday season arrives so does the foods we try to stay away from all year long. Don’t get me wrong I love a good turkey dinner with all the fixings but my exercise and Weight Loss San Diego regimen does not. There is a solution to this problem, swapping out some of the heavier foods for more healthy options. Here is an awesome recipe I found to swap out my garlic mashed potatoes… garlic mashed cauliflower! Cauliflower provides high levels of vitamin C and K, reduces risk of cancer, improves digestion, helps with detoxification, helps to balance hormones and helps preserve eye health. Here is what you will need for your garlic mashed cauliflower; 1 head of cauliflower (cut into florets), 1 tablespoon of olive oil, ½ teaspoon of kosher salt, 1 clove of garlic (smashed), 1/8 teaspoon of pepper, 2 tablespoon of reduced fat cream cheese, ¼ cup grated parmesan cheese.
To begin; team cauliflower until tender for around 10 minutes, while that is steaming heat olive oil in a small skillet over medium heat. Add garlic and cook for around 2 minutes, remove from heat. Transfer half the cauliflower to a food processer and blend on high, adding in florets until they are creamy. Blend in garlic, cream cheese, salt, pepper and parmesan cheese.
